A Time To Plant

And A Time To Pluck Up That Which Is Planted

This is the season when a gardener is reaping the benefits of all that hard work. There is more produce than can be consumed which means preserving the harvest – canning, freezing, dehydrating, fermenting and pickling – making sure all the hard work pays off with food for the winter.

For me that means the lima beans go in the freezer, the sweet potatoes go in the basement, the white potatoes are dehydrated as are the carrots and the onions, the green beans are canned, the cucumbers are pickles, sweet and bread & butter. The tomatoes are washed and cored and are tempoarily housed in the freezer to be turned into sauce when my schedule slows a bit. The zucchini is also in the freezer, some of it chopped or shredded and some of it saved in the form of delicious loaves of lemon zucchini bread.

Sadly my first attempt at fermenting did not end well but there will be sauerkraut in my future!
